I love the tastes of Autumn. It seems as the temperatures cool, the foods get warmer, more comforting and full of spice. It's also the season for fresh apples and pears. I have loved making this simple dessert for my family that tastes like a warm basket of apples on an Autumn day. So tasty, not too sweet and super fast to make! Made with low sugar and Dairy Free. 

French Apple Cake

Ingredients:

~1-1/4 Cups Gluten Free Flour Blend 

~ 1/2 tsp Xanthan Gum

~ 1 tsp Baking Powder 

~ 1/4 tsp Sea Salt 

~ 1 tsp Cinnamon or Pumpkin Spice

~ 3 Large Apple or Pears (or a combo of both) - peeled and thinly sliced 

~ 1/2 cup Olive Oil

~ 1/3 cup Coconut Sugar 

~ 3 Tbsps Dairy Free Yogurt (I use Silk unsweetened coconut)

~ 3 Tbsps Dairy Free Milk 

~ 1 tsp Vanilla Extract 

~ 2 Large Eggs

 

Topping 

~ 1/4 cup of Apples

~ 2 Tbsp Sliced Almonds - toasted

~ Honey 

~ Cinnamon or Pumpkin Spice

 

Directions:

1.  Preheat Oven to 350°F. Line a 9" Round baking dish or 8x8 square pan with parchment paper. Coat any visible areas with a brush of oil or spray to prevent sticking. 

2. Wash apples and/or pears, peel and slice thinly. Put 1/4 cup aside for the topping. Put the rest aside. 

3. Combine all dry ingredients together in a bowl. Combine all wet ingredients separate in another bowl. Fold the dry ingredients into the wet. Add extra milk if too thick (must be able to spread easily in the pan later). 

4. Spread half of the batter on the bottom of the pan and place apples in single layer on top. Pour the rest of the batter and place the rest of the apples if any and the 1/4 cup set aside. 

5. Pour sliced almonds in a pan and toast over medium high heat watching closely till slightly browned. Sprinkle on top of cake. drizzle honey lightly and sprinkle with pumpkin spice or cinnamon. 

7. Bake in Pre-heated oven for 35-40 min till cake is set and lightly browned.
