Gluten Free Gardener's Banana Snack Cookie

These have became a new favorite cookie for us! They actually taste alot like banana bread. They're delicious snack cookies that are fast to make and a great snack with a good amount of protein to keep you full while you're out working in the garden. In this recipe we roast the oats over the cooking stove which not only enhances the flavor of the oats but also makes them more digestible and breaks down some of their carbs.

Ingredients:

1/2 cup Banana (about 2 Ripe Mashed Bananas)

1/3 cup Peanut Butter 

2 Tbsps Cane Sugar

1 Egg

1 tsp Vanilla Extract

1 cup Brown Rice Flour

1 1/2 Whole or Quick Oats 

1/2 tsp Baking Powder

1/2 tsp Baking Soda 

1/2 tsp Salt 

1 tsp Cinnamon

1/2 Cup Chocolate Chips

 

Directions:

  1. Preheat oven to 350 degrees Fahrenheit.
  2.  Start Roasting your oats over the stove on medium high heat stirring as it roasts.
  3. Mix wet ingredients set aside
  4. Mix dry ingredients adding in roasted oats 
  5. Mix wet and dry ingredients together
  6. Prepare a baking sheet with parchment paper and scoop 1 heaping tablespoon of cookie batter onto the baking tray and flatten gently into form of a cookie
  7. Chill for 10-15 min in freezer to firm up before baking
  8. Bake for 10-12 minutes or till golden around edges and slightly soft texture but still firm.
  9. Eat right out of the oven! Haha or you can let cool, but my dad and I broke the rules. :-)

These cookies are surprisingly filling! We had some before we went for a long walk the other day and I ate a couple to hold me while I was busy packing seed orders! They store well too!
